A seafood restaurant and three other stores will open next year in Birkdale Village in Huntersville, north Charlotte, as a long-standing restaurant expands.

Chicago-based Brown Bag Seafood Co. is a fast, casual restaurant with counter service. It is slated to open early next summer, real estate firm North American Properties, owner of Birkdale Village, said on Thursday.

Customers choose from a variety of seafood, such as grilled salmon, shrimp, or rotary daily catches, as well as chicken, vegetarian, and vegan options.

Last year, Donna Lee, owner of Brown Bag Seafood, extended the seven-year-old concept outside of Chicago by opening two stores in Atlanta. Next year, Lee plans to open at least three locations in the Charlotte area, North American Properties said.

Another restaurant in Birkdale Village is also making changes. Local company eeZ Fusion & Sushi, which opened in Birkdale Village 16 years ago, is preparing to expand with a complete renovation, according to the press release.

Three other retailers will also join the mix, North American Properties said: Apricot Lane, Girl Supply and Lovesac.

It’s all part of the centre’s redevelopment plan to incorporate more smaller-format stores, including chef-run restaurants and pop-up shops.

The company does not disclose the amount of the investment.

Birkdale Village’s transformation will include a mix of dining, fashion, home goods and self-care in one connected place, said Adam Schwegman, NAP partner and senior vice president of leasing.

New retailers will join other recent additions Buttermilk Sky Pie Shop, Sephora and Kendra Scott. Green Brothers Juice Co., previously announced, is slated to open in the spring.
